The popular answer here is olive juice. If I asked for a dirty Gibson Martini and you put olive juice in it, I'd make it my mission in life to get you fired.
It's a 1/4 tsp of the juice from what ever garnish you use. If it's olives, by all means but there are millions of martinis out there and many of them demand a little more than an olive on a tooth pick.
FYI, the juice to be used for a dirty Gibson Martini is juice squeezed out of a pearl onion.

A Martini, vod or gin, has some vermouth added. I believe a dirty Martini includes a bit of Scotch rubbed/swished inside the glass before the vod/vermouth/ice shakies are poured in.
(No ice cubes in the glass, the shaking is to get tiny ice crystals into the vod....)
