It is generally known that there is more nutritional value in steaming veggies rather then boiling them, but in every cook book I have, I am directed to boil my veggies before roasting or mashing them. Why is this?

steaming takes longer, so for a pro chief time it takes to serve food is important

It really depends on the potato or veggie and what I'm going to do with them. I use a variety of techniques for cooking veggies and potatoes. Depends on what I'm doing with it. Over cooked veggies will lose their flavor and nutritional value. Most times "blanching" is required. Where they are cooked for a small amount of time for a specific reason.

I work in a hotel as a chef and we never boil them there always steamed.Maybe your thinking of par boiling something
