I am sure they use soft drinks in place of the alcohol. Did you know that weak ice tea can look similar to many mixed drinks or even straight shots? Apple juice with seltzer water or club soda could be a beer. That is how they do it. The alcohol rules a long time ago concerning TV were stricter than they are today. I remember when you couldn't drink alcohol on TV even to toast someone. They have loosened these laws a lot since then. Shoot, even Martha Stewart drinks on her show.

I really have no idea, but I would guess that it varies. I don't think it's against any rules to use it, but I can't imagine that they would use it all the time. Once in a while, I bet they are really drinking wine or beer.

Because it would raise legal issues and insurance rates they do not use real alcohol. They use everything from ginger ale to apple juice, non alcaholic beer etc.
