Plain spinach is not fattening, it's just leaves. If you add butter or oils to it, like many recipes do, then it's fattening.
My fave recipe for spinach, which shouldn't be fattening at all, is just wilted spinach: Put a dash of salt & pepper, a dash of lemon juice, a dash of water, a tiny pinch of nutmeg, and a half-teaspoon of olive oil in a big saucepan. Throw in a bag of prewashed spinach. Stir over high heat until leaves are wilted. You can even leave the olive oil out if you are really neurotic, it's still good!

Did you ever see Popeye being fat? Spinach when eaten plain is absolutely not fattening. You can eat a ton and not gain an ounce.
