yes you can freeze things
but I would not recommend microwaving them too long or they will get tough
the toaster is best for pancakes and waffles
and for muffins I would thaw them on the counter

I do this all the time. I make waffles and pancakes weeks in advance and freeze them. That way all we have to do is pop them in the toaster and top with our favorite syrup or whatever. They last quite a while. I have had them in the freezer for 6 months before. As long as they are in an air tight container. I also freeze Banana Bread that I make during the holidays.

most all cookies can be baked then frozen, bake, cool, lay on cookies sheet and freeze, then put in containers,, or you can mix up the dough,, separate into balls or how it should be, freeze then store in freezer bags, defrost then cook,,,, cakes can be baked first, cooled then wrapped well and frozen, all should be defrosted well and at room temperature, then frost/icing them,,, dont frost before freezing
