You would have to keep him on a leash or keep a close eye on him all the time. It is a dog's instinct to roll, because whatever they roll in covers up their dog smell when they are hunting. That was the way the ancestors of our dogs hunted..

Keep the dog leashed unless you are sure the area is stink free. Most dogs have a different idea of what a good scent is from their owners.

if the stinky things are outside then put the dog's poo on what ever the stinky thing is. dogs won't go near their own poo, it's an instinct.

Keep him/her on a leash, until you train him/her not to. The "leave it" command is very useful for many things. You might consider taking him/her to a dog trainer.
