Sorry for all the nasty answers so far.
Unfortunately, even a little free-lancing, whether or not you are paid, is a violation of the visa waiver program.
Since he was refused entry, your boyfriend will have to apply for a visa at the nearest US embassy or consulate in order to return to the US. If he convinces the interviewing officer that he didn't realize he was not allowed to work and will never do it again, he might get a visa.
Alternatively, the folks he was working for can petition for him as an H-1 employee, if they want to employ him full time.

Wow, the bad men tricked you into telling the truth - that's awful! Hmmmmm.... "modeling," right? Cash under the table, no taxes.... not good.
If your boyfriend was using his French (EU) passport under the Visa Waiver Program, then he must now apply for a visa to visit the US. He may not get a visa because he has already demonstrated that he does not respect/conform to the laws of the US. It all boils down to choices and consequences.

They would of told him what documents he needed to return such as; proof of residence, proof of income and funds to support himself while he's here and of course a good reason to come here with an address where he's going.
After all that legit information is submitted at the time of entry it's up to the Officer to let him through or not.

I was checking out this website but unfortunately it doesn't specify a time frame. Wait, I think it said maybe 30 days after applying for a visa, you should hear something.
He may or may not be granted readmittance to the U.S. Here's the link maybe you can get more answers than I did. Good luck!!

They "tricked" you, huh? It was better that you told the truth. A lie could have gotten you sent to prison for up to 5 years.

He needs to ask for a pardon, and see if it gets granted. It could take 6-18 months.
