Bacon-Wrapped Chicken Breasts

This hearty bacon-wrapped chicken would be delicious with a rich, minerally white; beverage director Juliette Pope suggests an Austrian Grüner Veltliner, like the crisp, complex 2005 Hiedler Thal. If that proves difficult to find, seek out Hiedler's more affordable 2005 Löss.
ingredients
4 skinless, boneless chicken breast halves
Salt and freshly ground pepper
4 thyme sprigs, plus 1 teaspoon chopped thyme
8 slices of thick-cut bacon ( 1/2 pound)
3 tablespoons unsalted butter
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1/2 pound chicken livers, trimmed
1 medium shallot, minced
1 garlic clove, minced
2 tablespoons plus 1 teaspoon sherry vinegar
1 cup chicken stock or low-sodium broth
directions
Preheat the oven to 400°. Season the chicken with salt and pepper. Place a thyme sprig on top of each breast half and wrap each half in 2 slices of bacon; secure the bacon with toothpicks.
Heat a large, ovenproof skillet. Add the chicken and cook over moderately high heat until the bacon is browned, 5 minutes. Turn the chicken and roast in the oven for 10 minutes, or until cooked through. Add 1 tablespoon of the butter and the chopped thyme to the pan and baste the chicken. Let rest for 5 minutes.
Meanwhile, in a small skillet, heat 2 tablespoons of the oil. Season the livers with salt and pepper. Cook over moderately high heat until golden brown, about 4 minutes. Add the shallot and garlic and cook until softened. Add 2 tablespoons of the vinegar and cook for 2 minutes. Add the stock and the remaining 2 tablespoons of butter and simmer over low heat until the livers are firm. Puree the livers in a blender and strain through a very fine sieve set over a saucepan. Stir in the remaining oil and vinegar; season with salt and pepper.
Discard the toothpicks and thickly slice the chicken. Spoon the sauce onto plates, top with the chicken and serve.

garlic cheese biscuits: 2 cups Bisquick baking mix, 2/3 cup milk, 1/2 cup shredded cheddar cheese>beat together 30 seconds till well mixed. Drop by tablespoons full onto cookie sheet(Heap spoon) Bake 450 for 7-9 min. till golden on top Brush with 1/2 cup butter mixed with 1/4 tsp. garlic powder (melted) as soon as they come out of oven. Enjoy

Apricot Amaretto Stuffed Cornish Hens
Serving Size : 4
1 cup dried apricots, cut into small pieces
1/2 cup apple juice
1/2 cup Amaretto liqueur
3 English Muffins, cut into small pieces
1/2 cup slivered almonds, toasted*
2 tablespoons melted butter or margarine
1/2 teaspoon cinnamon
4 Cornish hens
1 teaspoon salt
2 bacon slices, cut in half
1/4 cup plum jam
In a small saucepan, combine dried apricots, apple juice and amaretto; bring to boil. Reduce heat to medium, cover and simmer 5 minutes. In a large bowl, combine English Muffin pieces, almonds, melted butter, cinnamon and cooked apricot mixture; mix well.
Remove inside bag from each Cornish hen; discard. Rinse each hen and pat dry. Sprinkle 1/4 teaspoon salt inside each cavity. Stuff each hen with muffin mixture. Skewer or sew opening together. Place hens breast-side up on rack in shallow roasting pan. Place bacon slice over each breast. Cover with foil. Bake at 350° F. for 1-1/2 hours.
Meanwhile, in a small sauce pan over low heat, melt plum jam, stirring frequently. Discard bacon, roast hens, uncovered at 350° F. for 15 more minutes, basting with plum jam every 5 minutes. Remove skewers or thread from hens. Garnish as desired.
* To toast almonds, spread on cookie sheet, bake at 375° F for 5 to 6 minutes or until light golden brown, stirring occasionally.
