All the marinara sauce is way past overdue, and I don't trust it. The pesto as well. What can I possibly add to some tomato paste to make it better?

Tomato paste is used to 'hold' a sauce together so it isn't too watery or runny.

Two suggestions:

1) Get a small variety (or just one if watching $)
of olives,(make sure you buy the pitted olives!) drained/rinsed capers, optional-chopped red or green bell pepper, finely minced anchovy for flavor (or a few chopped coarsely if you like anchovies),..
Using a Low flame, cook chopped onion & garlic in some olive oil.
Add the other ingredients, mix & let sizzle a bit.
Add the tomato paste.
Add enough water to break down the paste to a sauce. Pour over cooked pasta!

2) Again, using a low flame,..saute a bit of onion & garlic in oil.
Chop up yellow/green squash/zucchini, red bell pepper, small eggplant.
Add eggplant to pan 1st, cook for a bit (til translucent) add other veggies.
Stir a bit. Add tomato paste and enough water to break down the paste making sauce.
Add to cooked pasta - enjoy!

Be Careful NOT to ADD Too Much Water!

Note: If you have leftover veggies etc after this,.. another meal,.. you can simmer all the leftover in a little oil and chopped garlic. Have alone, over pasta/potato/a salad,.. Enjoy in good health! =)

Add a little red wine or vodka, basil, diced onions and minced garlic. Here's another idea.

Penne in Vodka Cream Sauce
Serving Size : 4

1 pkg Penne Rigate
4 - 5 slices bacon, finely chopped
1 onion, finely chopped
1/3 cup vodka or chicken broth
1 jar Five Cheese Pasta Sauce (maybe the tomato paste will work here)
1/3 cup whipping cream
1/4 cup chopped fresh parsley

Cook penne according to package directions. Sauté bacon 2-3 minutes. Add onion and sauté until tender. Add vodka; cook 1 minute or until most of the vodka has reduced. Stir pasta sauce and cream; simmer 4-5 minutes. Toss penne rigate with sauce and serve topped with parsley.

EASY, TASTY MARINARA SAUCE
Preparation - easy
Serves 4
Time: prep 10 min; cook 35 min

This quick and easy tomato sauce is delicious as is, but you can easily add sautéed zucchini or other vegetables, cooked hamburger, etc. The method we use derives from the origin of marinara sauce on pizza, where the ingredients cook together on top of the pizza in the pizza oven.


1 28 oz can (3 1/2 cups) tomatoes (Italian plum are best)or equivalent amount of fresh tomatoes, if you are lucky enough to have them
3 tablespoons tomato paste
4 tablespoons chopped fresh flatleaf (Italian) parsley
2 clove garlic, finely chopped (more to taste)
1 teaspoon dried oregano
1/2 tsp hot pepper flakes (optional)
1 teaspoon salt
freshly ground black pepper to taste
3 tablespoons good olive oil
1 package pasta of choice: spaghetti, spaghettini, etc.

UTENSILS: blender or food processor, skillet, pasta pot

IN a blender or food processor combine tomatoes, tomato paste, 2 TBSP chopped parsley, finely chopped garlic, oregano, optional pepper flakes, salt, and pepper and process until smooth.

IN a large pot, set the pasta water to boil.

HEAT olive oil to a large skillet over medium heat, ADD blended sauce.

SIMMER for 30 minutes, stirring occasionally and reducing heat if necessary.

COOK the pasta.

GARNISH with remaining chopped parsley, SERVE with grated Parmesan cheese.

SAUCE will hold 3 days in refrigerator; freezes well.

I don't have a recipe for red sauce, but you can probably make a delicious white sauce from things you already have. Gently heat 1 cup of milk and wisk in 2 tbsp butter and 2 tbsp flour and salt to taste. heat gently and wisk until thickened.

I like to add parmesian and chives for the last 2 or 3 minutes. You can add a hint of ground red pepper for a kick. play with the flavor.

this is good with spaghetti/fettucini/rotini and shrimp or chicken

Try some olive oil, garlic, and basil (either fresh or dried) and salt and pepper. Toss it all together on warm pasta and then put some parmesan cheese on it. If you have a few tomatoes, chop them and toss them on top. It's great and easy.
