My bedroom walls are boring, bland and just plain white.
Color scheme = Dark hunter green, Mint(ish) green and of course white lol.
I don't know what I'd call it... it's pretty modern with a touch of elegance.
Not into the poster thing and I'm completely clueless of what pictures I would put up.
Any suggestions? Oh! Photo examples would help alot!

Picture frames. Lots and lots of frames. With nothing in them and the white walls showing from behind. This is inexpensive and will create quite a dramatic impact if you place the frames in interesting patterns.

If you want color, find some fabric that you like and cover large canvas paint boards with it.

If you absolutely must keep the white walls, then hang some shelves and put things you like on them: framed photos, whatever collectibles you have, candles, maybe a small mirror or two.

You can hang pictures, too.

But think about getting rid of white walls. Beige, ivory, taupe, or another neutral can be a lovely substitute for white!

I know your not into posters but buy one anyway. Try a waterfall with dark green on the bottom. You can glue a poster onto a canvas then go over the poster with clear paint. This will give it a painting look. Add more colors into your room from the poster.

I recommend that you go to www.cb2.com It is a contempo modern online store. They have very cool stuff for the walls. If it is possible to paint your white walls, I would recommend adding another lighter shade of green and then accenting with other colors. Check out your local fabric store for ideas on colors.

You could put wallpaper boarders around the top or at chair rail height

Try shadowboxes with candles or tealight candles
