SALMON PATTIES

16 ounces pink salmon, canned
1 egg
1/3 cup onion, minced
1/2 cup flour
1 1/2 teaspoons baking powder
1 1/2 cups vegetable oil, for frying

Drain salmon. Set aside 2 Tablespoons juice in mixing bowl. Mix together salmon, egg, and onions until sticky. Stir in flour. Add baking powder to juice, then stir into salmon mixture. Form into small patties. Fry until golden brown (about 5 minutes).

Yes you can, but your end result is going to be a little different if you're used to pan-frying them in vegetable oil. When frying, you get a nice hard crust formed on the outside, with a well cooked center. Salting them afterwords and adding a little spice finishes them.

Baking will always work, and is the low-fat option. It will make your patties have a more consistent texture throughout, unless you finish them for a few seconds under the broiler, which would give them a bit of canalization.

Yes. Bake at 350 on a sprayed cookie sheet. When done, crank up the broiler to brown, turn and brown other side. Need to watch closely when browning.

Yes after coating them with bread crumbs, spray with cooking spray. This makes them crisp.
