Being a former chef and cut many sides of beef, there is no one part that has more than the other, most of the fat used for beef tallow, which can be used for deepfrying or as a pastry fat is from the back and the internal fat, like suet and around the other organs.

At one time next to lamb fat, beef tallow was used for soap, candles and furniture polishes, not a days with the health lifestyle we are all suppose to be following it is to high in saturated and trans fats to be used in abundance, when I worked in Alberta Canada, there was a meat packer that produced this and sold it as a deep fryer fat in the Safeway down the road.
