My family likes tuna casserole, but I'm getting sick of the bland cream of mushroom soup and noodle recipe. Any recipes for a yummy but jazzy casserole you would like to share?

Use Cream of Celery Condensed Soup instead of Cream of Mushroom......

You could use the Cheddar Cheese Soup, Cream of Shrimp, Brocolli Cheese, or any cream soup of choice. I like the crunchy french fried onions, but you could use crushed potato chips in place of bread crumbs.


By-The-Sea Casserole
Serving Size : 6

1 bag (16 ounces) frozen Mixed Vegetables
2 cans (6 ounces each) tuna in water, drained
1 cup uncooked instant rice
1 can (10-3/4 ounces) cream of celery soup
1 cup 1% milk
1 cup cheese-flavored fish-shaped crackers

In medium bowl, combine vegetables and tuna. Stir in rice, soup and milk. Place tuna mixture in 1-1/2-quart microwave-safe casserole dish; cover and microwave on HIGH 6 minutes. Stir; microwave, covered, 6 to 8 minutes more or until rice is tender. Stir casserole and sprinkle with crackers.

Tuna Noodle Casserole

1 can (10 3/4 ounces) Cream of Mushroom Soup
1 cup milk
3 cups hot cooked rotini pasta (2 cups uncooked)
1 can (12 ounces) water-packed tuna, drained and flaked
1 1/3 cups French's® French Fried Onions
1 package (10 ounces) frozen peas and carrots
1/2 cup shredded Cheddar or grated Parmesan cheese

Combine soup and milk in 2-quart microwavable shallow casserole. Stir in pasta, tuna, 2/3 cup French Fried Onions, vegetables and cheese.

Cover; microwave on HIGH 10 minutes* or until heated through; stirring halfway through cooking time.

Top with remaining 2/3 cup onions. Microwave 1 minute or until onions are golden. Garnish with chopped pimiento and parsley sprigs, if desired.

Conventional Directions: Prepare ingredients as above. Bake in preheated 350°F oven for 30 minutes or until hot. Stir. Sprinkle with remaining onions. Bake 5 minutes until onions are golden

Fabulous Tuna-Noodle Casserole:

1/4 cup butter or margarine
1 small red or green bell pepper, chopped
1 small onion, chopped
1 cup sliced fresh mushrooms
1/4 cup all-purpose flour
2 1/2 cups milk
2 cups (8 ounces) shredded Cheddar cheese
2 (9-ounce) cans solid white tuna in spring water, drained and flaked
1 (12-ounce) package egg noodles, cooked
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup fine, dry breadcrumbs
2 tablespoons butter or margarine, melted

Melt 1/4 cup butter in a large skillet over medium heat; add bell pepper, onion, and mushrooms, and saute 5 minutes or until tender.

Whisk together flour and milk until smooth; stir into vegetable mixture, and cook, stirring constantly, 5 minutes or until thickened. Remove from heat; add cheese, stirring until melted.

Stir in tuna and next 4 ingredients; spoon into a lightly greased 13- x 9-inch baking dish.

Bake, covered, at 350° for 25 minutes. Stir together breadcrumbs and 2 tablespoons melted butter; sprinkle over casserole, and bake 5 more minutes.

Yield: Makes 6 to 8 servings

I really like curry powder with my tuna, and make a tuna salad with tuna, mayo, raisins and apples and curry powder. So I looked for a similar cassrole and found one!

add peas ,mushrooms,shredded cheese,diced onion,sometimes i add a little bit of ranch dressing in mine.
