Angel Hair Pasta Delight:
When I created this recipe, I had recently discovered Asiago cheese and loved the flavor. It really makes a difference when added to a simple dish, and a little goes a long way.
2 teaspoons olive oil
1 1/2 cups chopped Vidalia or other sweet onion
3 garlic cloves, minced
1/4 cup water
1 (10-ounce) package fresh spinach, chopped
2 cups chopped plum tomato
2 cups chopped cooked chicken breast (about 1/2 pound)
1/4 cup chopped cooked bacon (about 2 slices)
3 tablespoons balsamic vinegar
4 cups hot cooked angel hair (about 8 ounces uncooked pasta)
1/4 cup (1 ounce) shredded Asiago cheese
Heat oil in a large nonstick skillet over medium-high heat. Add onion; sauté 2 minutes. Add garlic; sauté 1 minute. Add water and spinach; cover and cook 2 minutes or until spinach wilts.
Stir in tomato, chicken, bacon, and vinegar; cook 1 minute or until thoroughly heated. Serve over pasta; sprinkle with cheese.
Yield: 4 servings (serving size: 1 cup spinach mixture, 1 cup pasta, and 1 tablespoon cheese)

Crispy Mozzarella Sticks Marinara:
4 (3 x 1/2 x 1/2-inch) sticks part-skim mozzarella cheese (about 3 ounces)
2 teaspoons commercial pesto
4 sheets frozen phyllo dough, thawed
Olive oil-flavored cooking spray
1/4 cup fat-free tomato-and-basil marinara sauce
Preheat oven to 400°.
Coat cheese with pesto.
Cut phyllo sheets in half crosswise to form 8 (13 x 9-inch) rectangles. Place 1 phyllo sheet on a cutting board or work surface (cover remaining dough to keep from drying); coat with cooking spray. Place 1 sheet on top of first sheet. Fold in half crosswise to form a 9 x 6 1/2-inch rectangle. Place 1 stick of cheese at center of a short end of rectangle; fold long sides of phyllo over cheese, coat with cooking spray. Starting with the short end, roll up phyllo jelly-roll fashion. Coat with cooking spray. Place on a baking sheet coated with cooking spray. Repeat with remaining phyllo and cheese. Bake at 400° for 12 minutes or until golden brown.
Heat the marinara sauce in a small saucepan over medium-low heat until thoroughly heated. Serve marinara sauce with mozzarella sticks.
Yield: 2 servings (serving size: 2 cheese sticks and 2 tablespoons marinara sauce)

I just made fried goat cheese balls tonight, but have done the same with mozzarella and it is great! Buy a good quality mozz chunk. Cut into the shape you want them to be in, sticks, rectangles, whatever you want. Beat an egg and put in a bowl, and also put bread crumbs into another bowl with whatever seasonings you prefer. I put in salt, pepper and italian seasonings. dip the cheese into the egg and then cover with bread crumbs. Chill the cheese before frying (it prevents melting) In a small sauce pan heat oil until it is smoking. you can use olive oil or a basic canola, I usually use a combo. The oil should be deep enough to cover the mozzarella pieces. When the oil is hot enough, drop the cheese in. They should only need to be in the oil for a few seconds, the bread crumbs will turn a golden brown. Remove with a slotted spoon and place on a paper towel to absorb the extra oil. Serve hot! Yum!

Buy mozzarella sticks and cut them into pieces. Roll them in flour seasoned with salt and pepper then dip into slightly beaten egg. Roll in bread crumbs. Let them sit for a few minutes until the egg has a chance to dry and turn into a slight crust. This will help prevent the cheese from melting into your oil. Fry in a few inchs of oil set between Medium and Medium High on your stove. Fry until golden but the cheese has not melted out. Drain well on paper towels.

buy string cheese roll it on a plate of mayo then roll it in a plate bread crumb's can buy a can for a dollar lightly grease cookie sheet bake for a few minutes or fry in vegtable oil *** simmer sauce in a pan for at least an hour cook pasta (boil) 6 minutes add a little oil so it does not stick dump out water add a table spoon butter stir add to sauce

you need to freeze your cheese sticks and flour them before dipping them in a batter or rolling them in crumbs.
A good pasta is only as good as the sauce it's served with and it can't be overcooked.
Just as an aside, Pizza Hut uses mozzarella sticks for it's stuffed crust pizza.....
