There is no loss; it's just a different connector type and all of the wiring in a HDMI to DVI adapter is direct connection.

I did see a difference between HDMI and composite cable. HDMI is the latest technology and it is one of the best quality of picture I have seen with my TV. Why would I want to convert from HDMI to DVI?

No. Both are digital interfaces (they pass digital data) and HDMI is backwards compatible with DVI
