And how much should be used in the pan? We enjoy chili reonoes, chimichangas, onion rings, etc. Why would one oil be better than the other?

Vegetable oil or canola oil are what I usually use. Peanut oil is also good if no one in your family has alergies. Just stay away from any olive oil because it can't take the high temps. And you want enough in the pan that your item is covered. You can't really have too much, except it could get wasted unless you strain it and then put it in a container to re-use it. If you like fried items like those, you may want to get a deep fryer. I love mine!

A vegetable oil - I prefer corn oil for deep frying - would be best for the foods you listed. If you are deep-frying meats that require a longer cooking time or a higher temp, then go with peanut oil. But remember, peanut oil costs a lot more.

I've heard peanut oil is good, because it has a high smoke point.

I think the rule of deep frying is that it should be deep enough that frying items should be submerged in the oil while cooking.

Groundnut oil is my choice. You can get it to a high temp and the flavour is mild.

Peanut Oil.
It's healthy and very good for frying.
I use it all the time to fry french fries, celery (for an ethnic dish), and eggplant (another ethnic dish).

PEANUT OIL is the BEST! It doesn't burn.
