Apple Crisp Apples, peeled, cored & sliced 3/4 c. oats 1/2 c. (or 1 stick) margarine or butter, softened if baking the crisp (see below) 3/4 c. brown sugar 3/4 c. flour 1/4 c. sugar 1 tsp. cinnamon There are two ways I do this. First you can place your apples in the bottom of a greased 9 x 13 pan. Preheat oven to 350 degrees. Mix the rest of the ingredients with an electric mixer. Sprinkle over top the apples. Bake for 45 minutes. The other way is to cook your apples in the microwave or in a saucepan. In a small bowl combine the flour, brown sugar, sugar and cinnamon. In a skillet, melt the butter or margarine with the oats. Add this flour mixture to the oats in the skillet. Stir until mixed. Put some cooked apples in a bowl and top with the oat mixture.

Delicious Apple Crisp
"This takes a little longer but is truly worth the extra effort. You can use the apple filling as topping for ice cream, for apple crisp, apple pie, or anything else you like to top with apples."
INGREDIENTS
3 cups water
2 tablespoons ground cinnamon
1 cup white sugar
2 teaspoons cornstarch
9 Granny Smith apples - peeled, cored and finely diced
1 cup quick cooking oats
3 tablespoons butter, melted
1/4 cup packed brown sugar
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. To Make Apple Filling: In a large saucepan combine water, cinnamon, sugar, and cornstarch. Mix well, then add apples to pan. Simmer over medium heat, stirring occasionally, until apples are tender. Pour apple filling into a 9x13 inch baking pan.
3. To Make Topping: In a small bowl, combine oats, melted butter or margarine, and brown sugar. Mix well and sprinkle over apple filling.
4. Bake in preheated oven for 20 minutes or until topping is golden brown.

1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Arrange apples in an even layer in bottom of baking dish. Pour water over apples.
In a medium bowl mix together cake mix, brown sugar, and cinnamon. Stir in melted butter or margarine until ingredients are thoroughly blended; mixture will be crumbly. Sprinkle mixture over apples.
Bake in preheated oven for 50 to 55 minutes.

Apple Crisp:
6 Golden Delicious apples (about 3 pounds), peeled, cored, halved, and cut into 1/4-inch slices
1/4 cup honey
1/2 cup chopped pecans
Zest and juice of 1 lime
3/4 cup all-purpose flour
1/2 cup light brown sugar, packed
3 tablespoons unsalted butter, chilled and cut into small pieces
Ice cream (optional)
Heat oven to 350° F. In a shallow baking dish, combine the apples, honey, pecans, lime zest, and juice. Toss and set aside.
In a bowl, combine the flour, sugar, and butter. Using your fingertips, work the butter into the flour mixture until crumbly and sprinkle over the apples.
Bake until the apples are tender and the topping is golden brown, about 45 minutes. Remove from oven and let sit, covered, for 10 minutes. Serve warm, with ice cream if desired.
Yield: Makes 6 to 8 servings

I use my Mother's recipe with Cortland Apples...
OLGA's APPLE CRISP:
4 cups apples, peeled and sliced
2 Tablespoons lemon juice
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup water
1 cup granulated sugar
3/4 cup flour
1/2 cup oatmeal
1/3 cup butter
Wash, peel, core and slice apples, toss apple slices in a bowl with lemon juice to prevent darkening. Arrange apple slices in a buttered baking dish.
In a bowl, combine cinnamon, salt and water. Sprinkle mixture over apple slices.
In another bowl combine sugar, flour and oatmeal. Cut butter into dry ingredients. Spread crumb mixture over apple slices.
Bake at 350 degrees for 40 minutes, or until apples are tender and topping is lightly browned. Serve warm.

Improved Dutch Apple Crisp
4-6 servings 1½ hours 40 min prep
Change to: servings US Metric
2 1/2 lbs granny smith apples (about 5)
2 lbs macintosh apples (about 4 medium)
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons unsalted butter
3/4 cup golden raisins
1/2 cup heavy cream
Streusel Topping
1 (1 1/4 cup) all-purpose flour
1/3 cup packed light brown sugar
1 tablespoon cornmeal
7 tablespoons unsalted butter, melted
Peel, quarter, and core apples, slice each quarter crosswise into pieces 1/4 inch thick.
Toss apples, sugar, cinnamon, and salt in large bowl to combine.
Heat butter in large Dutch oven over high heat until foaming subsides; add apples and toss to coat.
Reduce heat to medium-high and cook, covered, stirring occasionally, until apples are softened, about 5 minutes.
Stir in raisins; cook, covered, stirring occasionally, until Granny Smith apple slices are tender and McIntosh apple slices are softened and beginning to break down, about 5 minute longer.
Set large colander over large bowl; transfer cooked apples to colander.
Shake colander and toss apples to drain off as much juice as possible.
Bring drained juice and cream to boil in now-empty Dutch oven over high heat; cook, stirring occasionally, until thickened and wooden spoon leaves trail in mixture, about 5 minutes.
Pack cooked apples into 8-inch square baking dish and pour reduced juice mixture over.
Smooth with rubber spatula.
Streusel topping: Combine flour, sugars, and cornmeal in medium bowl; drizzle with melted butter and toss with fork until evenly moistened and mixture forms many large chunks with pea-sized pieces mixed throughout.
Line rimmed baking sheet with parchment paper and spread streusel in even layer on baking sheet.
Bake streusel until golden brown, about 5 minute.
;cool baking sheet with streusel on wire rack until cool enough to handle, about 5 minutes.
Sprinkle streusel evenly over pie filling.
Set pie plate on now-empty baking sheet and bake untel streusel topping is deep golden brown, about 10 minutes.
Cool on wire rack and serve.
