1/3 cup plain fat-free yogurt
1 tablespoon fat-free sour cream
2 cups pumpkin puree
3 eggs, or equivalent
1/4 cup vegetable oil
2 1/2 cups all-purpose flour
3/4 cup SPLENDA® No Calorie Sweetener, Granular
4 teaspoons baking powder
1 tablespoon pumpkin pie spice
1 cup raisins
1/4 cup chopped walnuts
Directions Preheat oven to 350 degrees F. Spray two 9X5 inch loaf pans with butter-flavored cooking spray. Set aside.
Blend yogurt, sour cream, pumpkin, eggs and vegetable oil in a large mixing bowl. Add flour, SPLENDA® Granular, baking powder, baking soda and pumpkin pie spice. Stir well. Add raisins and walnuts. Stir until just blended.
Spread batter into prepared pans. Bake 45-50 minutes or until a toothpick inserted in the center comes out clean.
Cool and cut each loaf into eight thick slices.

Make a pie out of it. But because of your diet your fake sugar, and everything fat free. I know how you feel. I'm on a strict diet too. I'm a size two and want to keep it that way. But if you not sure about the calories, just give it away.

Why don't you try this Pumpkin Soup?
Ingredients:
* 1/4 cup (1/2 stick) butter or margarine
* 1 small onion, chopped
* 1 clove garlic, finely chopped
* 2 teaspoons packed brown sugar
* 1 can (14 1/2 fluid ounces) chicken broth
* 1/2 cup water
* 1/2 teaspoon salt (optional)
* 1/4 teaspoon ground black pepper
* 1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
* 1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk
* 1/8 teaspoon ground cinnamon
Directions:
MELT butter in large saucepan over medium heat. Add onion, garlic and sugar; cook for 1 to 2 minutes or until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low; cook, stirring occasionally, for 15 minutes. Stir in pumpkin, evaporated milk and cinnamon. Cook, stirring occasionally, for 5 minutes. Remove from heat.
TRANSFER mixture to food processor or blender (in batches, if necessary); process until smooth. Return to saucepan. Serve warm.
