On New Years Eve I am making eggnog to this recipe:

• 6 eggs
• 1 cup + 1 tablespoon sugar
• 1/2 teaspoon vanilla extract
• 1/4 teaspoon ground nutmeg
• 3/4 cup brandy
• 1/3 cup dark rum (Captain Morgan for best flavor, but Myers is OK)
• 2 cups whipping cream
• 2 cups milk
All liquids should be very cold. Refrigerate in advance.
Beat the eggs for 2 or 3 minutes with an electric mixer at medium speed until very frothy. Gradually beat in the sugar, vanilla and nutmeg. Turn the mixer off and stir in the cold brandy, rum, whipping cream and milk Chill before serving. Sprinkle individual servings with more nutmeg.
Makes about 2-1/2 quarts.

These are American measurements I am converting them to English ones. Also I am doubling the recipe because I want to make enough to give 4 adults 2 portions each and I have heard that its roughly 1 egg per portion.

Has anybody made eggnog and if so do you have any tips for me?

OOhhh, Honey your recipe sounds way better than mine & my sister's did....... We used to experiment when we were kids, and alls we put in the milk, was cinnamon, and nutmeg, and eggs, and vanilla, blended it in the blender!! And we just loved it!! But wow, your's sounds FABULOUS!!!! I hope you wont mind me copying down your recipe!! I wish I had something to add, but boy oh boy, you sound like you got it down!!! I wouldn't change a thing, hun!!! So, if it's okay, I'm going to copy this down, before I lose this one!! Man, oh man!! YUMMO!! Smile!!!! Old-Fashion Creamy Eggnog

-50g icing sugar,
-4 eggs,
-1/4 tsp salt,
-1/2 tsp vanilla extract
-1 3/4 pints of double cream (or milk),
-Whipped cream (double cream whipped),
-nutmeg

in blender combine icing sugar, eggs, salt, vanilla and blend (20secs). In a suacepan place 500ml double cream and cook over med. heat until at 60'c (5-6 minutes). While blending slow speed, add warm double cream to egg mixture. blend until frothy (20 secs). In saucepan add egg mixture to the remaining double cream. Cook over med. heat until thermometer reaches 60'c (5-6min) stirring occasionally.

This can be stored for 2 days but must be heated back up to 60'c before use according to recipe. If desired add 30ml of rum to each serving and top with whipped cream and nutmeg

Sound about right... This is the one I always use....

Classic Nog

12 eggs (separated)
1 cp. sugar (I use 1/2 cp. Splenda for Baking)
1 1/2 cps. "Good" Bourbon
1/2 cp. "Good" Brandy
1 cp. heavy cream
3 cps. whole milk
3 cps. Half & Half
1 1/4 tsp. Freshly Ground Nutmeg

In a large bowl - beat egg yolks & sugar on low speed w/electric mixer until blended. Turn mixer to high & beat until thick & pale colored (about 10 minutes)
Add Bourbon & Brandy in a thin drizzle while continuing to beat at high speed.
Cover & refrigerate at least 20 minutes

In another bowl with clean, dry beaters whip egg whites & cream to form firm peaks. Pour chilled egg yolk mixture into a large punch bowl; add milk, half & half & nutmeg.
Gently fold in egg whites & cream, JUST until blended.

Sprinkle w/a bit more nutmeg & serve....

I made eggnog for the first time this year too. I like it - it's like drinking cold alcoholic custard. I used a cooked egg recipe which was then chilled, though. Using my frothie maker.

No I hate it, no count if if save bought or homestead made, i do no longer like it the two way! i'm pleased with it in my bigelow tea and that's approximately it. i do no longer in basic terms like the ice cream sandwiches the two! Yuck!

something you should know.... the standard measurement of 1 cup has been universally voted to be equal to 1 bottle

Don't do it! Have a nice glass of wine or sherry instead, and save the calories.

if you are worried about egg safety - look for pasteurized eggs or use egg substitute. otherwise I say - go for it. ENJOY!!
