My wife is a a beautiful Creole woman and really good cook, and she is pretty good at cleaning/ cooking chitlins. I just want to know if there are any recipes that include cooking Chitlins ( pork intestine ) beside the traditional Deep south way, slow cooked in a stock pot. Please help !!!

dip into buttermilk then coat with white cornmeal with a little paprika and red pepper. pan fry .... cook till very lite brown (not crisp) .............. i advise you to cook out side... no matter how you prepare chitlins they will stink up the house

I can tell you how to boil chitterlings but I don't eat the fried ones.
Clean the chitterlings well and rinse. Put in a stock pot of water. Season with an onion cut up in chunks, a stalk of celery, garlic powder, a few chicken bouillon cubes, some creole seasoning, and boil until tender. Adjust seasonings. I love chitterlings fixed this way. Give me a bowl of them, some white beans and a big chunk of crusty warm cornbread and yummmmm!!! I can't imagine wanting them any other way.

Well first how in the world could u and your wife eat that stuff? Last I heard people should eat healthy foods not pigs intestine
