It depends on the need. I believe during WWII, they took people into their 50s.
The registration age for the draft is to 35.
I believe right now they'll take someone just joining voluntarily at 40 (if the physical is passed).

For most branches of the service, you can't enlist or get a commission to become an officer after your 35th birthday. However, the Army has relaxed the rules lately -- I think you can still get into the Army at age 38.

For the Air Force you have to be in basic training before you turn 27. I think the Army will take you until you're like 40.

The Army just raised the age to 42, provided you pass the physical requirements. Don't know about the other branches.

There're some major exceptions to the usual rules-- board-certified surgeons and Roman Catholic priests, for example, can get in at practically any age if they can pass the physical.
If the military needs you badly enough, it's amazing how flexible the rules can become.
