I have a recipe to marinade a beef flank. It calls to "score" the beef first, but I'm not sure what that means.

Scoring a steak will open it up to allow more flavors from the marinade inside. In your case, since you are using a flank or skirt steak, the connective fibers are very long, and the meat can be very tough if not cut on a bias. Scoring the steak will allow more of the elements in whatever marinade being used to get into the meat, and break down those connective fibers, making the cut more tender. Remember, marinades are not only for flavoring. The acids in them break down connective tissue, which means mmm mm good for you! Cut that baby against the grain, so it makes very thin strips about the size of a piece of fajita meat, and you'll have yourself some good eatin.

Scoring means cutting a VERY thin slit into the face of the meat - usually in a grid pattern. You do this to help the marinade absorbe into the meat.

Make shallow cuts into the surface of the meat. It allows better penetration of the marinade.
