I do a lot of outdoor portraits using woods and greenery as the background. I try to keep my subject far enough away so I can throw the background out of focus and not have it distract. A wide open space like a lake or beach setting can do this too. Assuming you are working on a modeling portfolio, you might want to make the backgrounds and setting a bit more interesting. Do you have access to any sort of industrial setting? A junkyard might be kind of cool or maybe a side street downtown if you live near a city. You should talk with your photographer about the 'look' you're aiming for and then he or she should be able to help you scout some interesting and unique locations. A porfolio should set you apart, so be wary of the standard stuff. Good luck!

It's key to choose a simple background that doesn't hog the attention away from you. A simple brick wall, maybe something flat but textured. If possible, pick colours that compliment your face.
