Here's one that has chicken in it, which you could omit.

Broccoli, Chicken & Rice Casserole

16 ounces broccoli, fresh or frozen
1 cup uncooked rice
3 cups water
1 envelope onion soup mix
1 stick butter, softened
1 4 ounce can undrained mushrooms
2 cups cooked chicken
Cheddar cheese

Mix together in crockpot. Cook on high 2 hours or low 4 hours. Enjoy!

I think you could make it and keep it warm in the crock pot but I wouldn't cook it in a crockpot.

The rice will become overcooked and mushy.

Hey mom. I'm a parent too, wow, it's so cool. Anyhows, all of those ingredients are great together. Rice is pretty easy, all we need is loads of flavour; like I mean loads of what does the flavouring, so, in this case, say, loads of cheese. Rice needs to be overpowered and gently forced into submission. You know, much like how we get our spouses to submit to us. [we give them so much love they just go, 'ok' and lay in our arms.] That's it, rice is always great if that one rule is observed.

you can make anything in a crock pot, just have to get a little creative, and possibly a timer for it.
