I think that it is the pesticides and the processes that the foods go through. My mother read an article somewhere a while back that stated that it was healthier to eat frozen vegetables instead of produce from a market because the frozen vegetables are Flash Frozen at the place where they are grown or nearby. The freezing helps them remain fresh. That is all the process they really go through.
Veggies from the market go through many handlers and are sprayed with chemicals to stop them from going bad. They could be a couple weeks old before you even get them at the store sometimes (unless the supplier is local). Fruits and especially vegetables (because we eat the peeling on them more often) should be washed thoroughly because of pesticides.
Your healthiest vegetables are the ones from your own garden. If they are not grown by you, they should Definitely be thoroughly washed and peeled, but especially washed.

I guess you could blame the heavy use of pesticides. By "hybrid" I guess you mean "genetically modified" (GMO) ?
It could be. But then again, some vegetarians brag about eating only "organic" foods. Is this taken into consideration in the survey ?
Also, some countries (I'm thinking in particular about India) have a majority of vegetarians in their population. A large middle class population has been developping there, meaning that these people are now able to afford medical treatment. So now they get their cancers diagnosed. Could that be a factor ?
The longest, most reliable study on cancer-causing factors is the one on cigarette and lung cancer, and it took a lot of time to make it. While I agree that the use of pesticides is probably harmful, one has to be careful with these statements, because sometimes other factors, that have not been properly explored, can influence any statistics...

While vegetarian diets have a (partly justified) good reputation for health, not all vegetarians eat healthily. Someone could live on french fries and candy and profess to be a vegetarian because those foods don't contain meat, but this person won't enjoy the health benefits that a vegetarian who actually eats vegetables and alternative protein sources does.

That's interesting! Especially since in general a vegetarian is 60% less likely than a meat eater to get cancer. However, the percentage of people getting cancer has increased in general, not just with vegetarians. My husband is recovering from cancer, and in my research, I do think it has a lot to do with pollution, stress and a poor diet. Your best bet is to go organic. Although it may be a bit more spendy, we eat organic as much as possible. Also, processed foods in general are just unhealthy. If I have the time I make everything from scratch, buy in bulk, etc... which can help save money on one end, so I can spend extra money on natural products. Also, don't forget, it's not just what we put IN our body, but what we put ON it as well. My husband and I have completely freed our house of all chemicals, replaced all our hygeine and cleaning products with natural products. 100% biodegradable, organic, cruelty free, the whole thing... It's also good for the safety of pets and children to rid your house of chemicals. Also, I'd rather give my money to small farmers, small companies, than pay massive amounts of money for a brand name to support a company that harms the environment or violates human rights. When you stop using chemicals you realize how much GARBAGE is constantly trying to be sold to you. Most everything in your house can be cleaned with vinegar and baking soda, yet they sell thousands of different toxic products for every tiny little different thing that needs to be done around the house. Also, we don't need to use a different product on each part of our body, although we're taught by commercialism that we in fact do need to. By the way, I also agree with someone's response that some vegetarians do not always eat healthy. I was vegetarian when I was young and lived off of white bread and coke. Ugh. I was young and idealistic but not well educated on nutrition at the time. I have since educated myself and wouldn't touch white bread or a coke! (and now vegan) =) Also, some fruits and vegetables are more likely to absorb pestisides than others. If you can't afford to go completely organic (although I do think it's worth the extra effort) then find out which fruits and veggies absorb pestisides easily (like strawberries I know for sure). Also, when I go to the store I buy a bottle of vinegar for less than a buck and big block of pure vegetable soap, and I can invest all my extra money I save by not buying toxic products in some healthy food for my body.

PESTICIDES!!!! Along with all of the other things you mentioned are so detrimental to our health. the cide in pesticde means to kill. if it will kill bugs, it will kill us. also herbacides are used. and all kinds of chemicals to alter the growth of supposedly natural foods. none of it is safe. best bet is to go all organic.
