This is a very interesting question that has been debated by many scholars.
Most of the original Buddhist texts are in the Pali language.The Buddha never use Sanskrit because it was the language used by the Brahmins.Sanskrit was introduced into Buddhist text by Nagajhuna(hindu converted to buddhist or as some commentators said;a hindu masquerading as a buddhist to sabotage buddhism).
Nowadays,in most countries that follow the Theravada tradition,the sevices are still conducted in the Pali language,whereas in the Mahayana tradition it is conducted in their mother tongue.

The original texts were written in Pali and Sanskrit. They have now been translated into many languages.
Recently a collection of Gandharan Scrolls from the1st century was discovered and is considered by scholars to be of the same order of importance as the dead sea scrolls. This collection is written in a language called Gandharan hence the name. This language is from Afghanistan.

Well Hindi might be one but the earlier texts are likely to be in Sanskrit. As the east is the modern centre for such believes you might say Mandarin!

That I'm aware of most of the texts were in Sanskrit and translated out from there to main texts in Japanese, Chinese, Tibetan and so on. Much of the stuff written down was lost in various wars and so on, but much of what's out there is slowly being translated to English for the benefit of those who need it that way.

It is said Pali,
many followers of Buddha were from different regions of India, what Buddha said must be translated into Sanskrit.
The country Siddhartha was born and raised was conquered by other country during time of Siddhartha.
