I really have gotten into cooking lately, but I run out of ideas for dinner! The things I cook mostly are spaghetti, hamburgers, and chicken, but I am looking for more dinner menu ideas. If you can, tell me the main dish and side dishes.

This is quick & fast main course prep 15 mins, cook 15 mins

Grilled Steak with Tomatoes, Onions & Protobello Mushrooms
4 Servings

2 tsp olive oil
2 cloves garlic, minced
4 slices (1/2 inch thick) red onion
4 large portobello mushrooms, stems removed
Nonstick olive-oil cooking spray
2 boneless rib-eye steaks(12 ounces each)
1/2 tsp salt
1/4 tsp black pepper
3 ripe tomatoes
Fresh chives or parsley, finely chopped (optional)

1. Heat grill to high. Meanwhile, in small skillet over medium heat, heat oil. Add garlic. Saute 2 minutes. Transfer oil and garlic to large bowl.

2. Coat onion slices and mushroom caps on both sides with cooking spray.

3. Grill onion and mushrooms just until browned, about 2 minutes each side. Cut mushrooms into thick slices. Add mushrooms and onion to garlic oil. Toss to coat.

4. Cut steaks crosswise into two equal-size pieces. pat dry. Season with salt and pepper. Coat lightly with cooking spray.

5. Grill steaks until seared and browned grill marks appear, 3 to 4 minutes. Turn steaks over. Grill 2 to 3 minutes for medium-rare, or until desired doneness.

6. To serve, cut each tomato into 6 slices. Arrange 3 slices on top of each cooked steak. Top with mushroom-onion mixture. Sprinkle with chives, if desired.

*** Any dish that can be grilled can also be broiler. Preheat the broiler and adjust the rack and broiler pan so food will be 3 or 4 inches from the heat source. Follow the same directions and times as for grilling.

Side-dish
A true health salad....

Avocado, Jicama & Orange Salad

3 tbs olive oil
1 tbs fresh - squeezed lime juice
1 clove garlic,minced
11/2 tsp white-wine vinegar
1/4 tsp ground cumin
1/8 tsp salt
pinch chili powder
8 ounces jicama, peeled and cut into 3 x 1/4-inch strips
2 oranges, peeled and cut into sections
1 avocado, pitted, peeled and cut into chunks
1/2 small red onion, thinly slice crosswise
8 cups torn romaine lettuce

1. In small bowl, whisk together oil, lime juice, garlic, vinegar, cumin, salt and chili powder to make vinaigrette. In large bowl toss together jicama, oranges, avocado, onion, and vinaigrette. Refrigerate 15 minutes.

2. Serve salad on bed of romaine leaves.

Try this...

Easy Cheesy Beef Enchilada's
Get two cans Old El Paso enchilada sauce and follow the directions on the back. It's really simple. All you need is ground beef, 2 Cups shredded cheese, and flour tortillas.

Brown the meat, add in one can enchilada sauce. Add shredded cheese and stir in until melted. Roll beef in tortillas. Pour the other can over the enchiladas in the baking dish and then pop 'em in the oven for about 15 minutes!

You can then get a spanish rice mix to make as a side. Then get some cornbread and or chips and salsa.

Cube Steak and gravy with rice
easy, easy
take your cube steak and dust with flour and then salt and pepper it (sometimes I mix my salt and pepper into my flour before dipping the steaks into the flour)
brown the steaks in a pan with some oil
then put in a baking dish
cover with some thinly sliced onions (you can saute the onions if you want)
pour one to two cans cream of mushroom soup over the cube steaks (use one to two cans based on how many cube steaks you are cooking)
cover with foil
bake 350 for about an hour and a half or so (it gets really tender with long baking)
serve with rice

Oh gosh this is good!!!!!!!!!

I just bought Rachel Ray's "365 no repeats" cookbook. I have made 5 dinners from it, and all were really good, 4 of them spectacular. Each meal uses common ingredients, and takes 30 minutes or less to prepare. I just love it!

Ever hear of pierogies? They are kind of like ravioli but larger and stuffed with mashed potato and cheese instead. Most supermarkets have them with the frozen french fries. You can do all kinds of things with them.

My favorite way to have them is take one box of pierogies and arrange them, still frozen, in a casserole dish. Pour on 8oz of tomato sauce, a 15oz can of diced, seasoned tomatoes, and stir it around a bit to mix it all up. Then sprinkle whatever shredded cheese you like on it. Bake covered at 350 degrees for about 40-45 minutes. Let it stand uncovered for a little bit to set up. And enjoy.

Put ANYTHING in the crock pot! It always comes out delicious. Some of my favorites are any kind of beef covered in beef broth and bbq sauce or chicken covered in chicken broth with potatoes or chicken smothered in green enchilada sauce. Yummy!
