I would have asked the pilots, but it's too loud for them to hear what the hell I'm saying and too rushed for them to care. I noticed that the exaust from Chinooks has a strong sweet, buttery aroma and the exaust from Blackhawks is almost odorless. I know they use the same fuel so I just can't figure out why they smell different.

If you had asked the pilot he probably would have looked at you funny. If you ask the maintainers they would suggest it has to do with the older T-55 engine being a little less efficient at burning the fuel as compared to the more modern T-700 series engines. I would suggest this isn't quite so as the upgraded T55-L-712 is just as efficient.
I don't suppose you know which model of Chinook do you? The D and E models are slightly different from each other.
The only other thing I can think of is if the Helo you were under had just had the engines sprayed with corrosion preventive compound. That does give a slightly sweet odour when heated. I noticed it on other Military Helos I have flown.

I would agree with the effieciency answer, but also add that they may not be burning the same fuel. I've been around some pretty odiferous Blackhawks that were burning JP-4/5, but JP-8 is a lot hotter fuel, and will burn cleaner. I've also been around Chinooks that were burning kerosene. Now that smelled right fair. Dumping massive amounts of carbon into the air, but smelled good.
I flew a Huey several years ago burning straight stove oil. That was interesting.

has to do with the turbine engines and how they burn. The Blackhawk is more efficient and burns cleaner, while the chinook creates more torque but is less efficient (dirty)

I don't like the way either of them smell. But would love to fly one for real.

lowflyer is the closest... it is dependent upon the fuel being burnt, the eficiency of the burn, and the direction of the wind.
