Hash Brown Casserole like Cracker Barrel's

Prep. Time: 0:45
Serves: 8

10.25 oz. can condensed cream of chicken soup
8 oz. Colby cheese - grated
1/2 cup melted butter OR margarine
1 sm. onion - minced
1 tsp. salt
1/2 tsp. black pepper
2 lb. bag frozen shredded hash browns

Spray a 13" X 9" X 2" baking pan with non-stick cooking spray; set aside.
-In a bowl, combine soup, cheese, butter, onion, salt, and pepper.
-Gently fold the potatoes into the mixture and pour into prepared pan.
-Bake in a 350 degree oven for 35-40 minutes, until heated through and top is browned.

Cracker Barrel Old Country Store's Hash Brown Casserole
1 package frozen hash browns - (2 lbs)
Salt -- to taste
Freshly-ground black pepper -- to taste
16 ounces sour cream
1 can cream of chicken soup
1 stick butter
1/2 cup chopped onion
2 cups grated sharp Cheddar cheese
Place potatoes in a greased 9- by 13-inch pan. Season with salt and pepper. In a bowl add minced onions, and mix together with sour cream and cream of chicken soup. Pour soup mixture over potatoes; sprinkle with Cheddar cheese and butter, that you have cut into cubes. Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.

try this one..
take 32 oz of potatoes shredded or cubed
16oz sour cream
one stick of butter
1 can of cream of chicken soup
16 oz colby jack cheese

mix soup, butter, sour cream and 1/4 of cheese - heat that in the micorwave. you should melt the butter then add the other items and nuke it some more. mix it with the potatoes and then bake at 350 for 45 minutes then 5 more with the rest of the cheese on it.

i like to use the potatoes that have the onions and peppers in it.... it adds a lot of flavor.
