There's a product called Glazing Medium that works well for your technique. Golden's is the best by far. It's a mixture of thinned polymer medium and retarder, and stays wet (depending on relative humidity) allowing blending for up to 60 minutes. You can re-apply it as often as you want, using it alone or mixing it with your paint.

Spraying with water can cause problems, such as thinning the paint too much which can actually make it dry faster, in turn making it streaky and harder to blend. Use retarder on its own with care, only a small amount is needed.

Have fun with it

Gesso is the paint that is used to make a canvas white... If you are looking to make your paint stay wet longer, you should use retarder. you can buy it at any artist supply store.

You can also spray your canvas with water....as you work. I do this often. Just keep in mind that water will dilute the color of your paint so don't use too much.

Gesso is a good idea unless it is an already gesso'd canvas. There isnt really anything to mix with the paint its pretty much up to you. Good Luck if you have anymore questions dont hesitate to ask. The best brand to use for acrylics is the liquatex brand they are a really good brand.

There is a medium called "Retarder" than is a liquidy gel that you can mix with the paint, it delays drying time. Golden should make it. Good luck!
