I cooked a beef stew in the slow cooker but instead of being tender the meat is very dry. What did I do wrong? Is there anything I can do to rescue it?

(I fried the meat first to seal it then cooked it in stock & ale).

don't fry the meat. if your using a slow cooker, you need to put all the ingredients in together. By frying the meat first, you are effectively cooking it !
