It's a boneless chicken breast.
It can't be too sweet or too fattening,(cousin is a diabetic)
and it must thoroughly explain the following.

1. What temperature for how long?
2. How to cut the chicken?
3. What drink should I prepare it with?

My answer to 3 is smoothies, sugar free vanilla yogurt and fruit.
Does this all sound OK?

Don't slice or cut the boneless chicken breast before you bake it.

After it is baked, right before you serve it, slice it very thinly straight downward from the side.

Depending upon the size of the chicken breast, I would say 350 degrees for 2 hours would do it. Check on it after one hour, I'd say every 15 minutes or so, to make sure it is done. Make a very tiny cut toward the center of the meat, and look for red meat and blood. It should not be red in the very center. Otherwise, it is not done.

I would definitely not fix smoothies to eat with dinner. Smoothies will fill up your guests too soon, and they won't be able to enjoy the dinner. Honestly, that is more of a dessert thing to serve about two or three hours after dinner. You can offer milk, soda, water with lemon, iced tea, wine, or coffee with dinner.

I would definitely fix a nice green salad to go with dinner, along with a vegetable. Dinner rolls would be a great complement!

I pulled this recipe off of a diabetic recipe website recently. It is VERY good. You can also do this without the mustards. Just serve vegetables diabetics can eat with it, like green beans, okra, side salad, or coleslaw. Stay away from peas, potatoes, and corn as much as possible. I used to do chicken this way only with flour and butter, but now that I have to eat like a diabetic, this is an awesome alternative.

Warm Oven-Fried Chicken with Three Mustards
(makes 15 servings)

olive oil cooking spray
1 1/2cups (210 g) dried plain bread crumbs
1/4cup (35 g) yellow corn meal
1/2teaspoon (2.5 ml) garlic powder
1/2teaspoon (2.5 ml) onion powder
1teaspoon (5 ml) chili powder
1/4cup (5 g) chopped parsley
5whole skinless and boneless chicken breasts, about 1 pound (480 g) each
3/4cup (180 ml) skim milk
1tablespoon (30 ml) olive oil
3mustards: Dijon, seeded country style, and wine
parsley sprigs for garnish


1.Preheat oven to 375°F (190°C). Lightly spray a large baking pan with cooking spray.
2.In a shallow dish, combine the bread crumbs, corn meal, garlic powder, onion powder, chili powder, and parsley. Set aside.
3.Cut each chicken breast into quarters, removing all fat. In a shallow dish, soak the chicken pieces in the milk for 10 to 15 minutes, turning once. Remove a chicken piece from the milk and dip in the bread crumb mixture. Place in prepared pan, separating each piece by at least 1 inch (2.5 cm). Repeat until all chicken pieces are coated. Drizzle with olive oil. Bake for 25 to 30 minutes until well browned.
4.Arrange the chicken on a serving platter and surround with small bowls of the mustards, placing a small spoon in each bowl. Garnish the platter with sprigs of parsley.

Per serving (without mustards):219 calories (14% calories from fat), 36 g protein, 3 g total fat (0.8 g saturated fat), 8 g carbohydrate, 0 dietary fiber, 88 mg cholesterol, 180 mg sodium

1. 400 degrees for 20-25 mins (cut-in to the chicken, if it's white it's done).
2. Cut? Are these individual breasts?

For an easy chicken breast, you can dip the chicken breast in egg, then into a parmesan cheese / bread crumb mix (1/3 cheese, 2/3 bread crumbs), then bake. This will put a little crust on the chicken.

I think Lemon/Garlic chicken is awesome. Take fresh garlic, mince it, take the juice of a few lemons, parsley, salt, pepper,
basil, olive oil, and pour over the chicken. Place in baking dish and bake at 350 for an hour.

I think that the smoothie might be too much like a dessert drink
Why not just serve a bubbly perrier (considering the diabetic cannot have alchohol)

This is not a baked Chicken but it sure is good,
in a large pot boil water and cook the chicken until done,cut into bite size pieces, then drain the water and add a whole container of salsa, a whole can of corn and cook, you can add a cup of water as needed to thin out the soup if desired, you can add chili powder for a kick
you can top with cheese if you desire and serve with tortia chips. A low fat, easy meal.
This can be put in a crock pot with frozen chicken on low heat and left to cook all day all you have to do before serving is to cut up the chicken into bite size pieces.

you could bake the chicken in a dish covered with foil with pineapples or Mandarin oranges for a varied dish,
bake at 350 degrees for one hour. makes a yummy main dish. Blessings to you as you cook for family, and have fun!

If I were you I'd grill the chicken breast on top of the stove.Marinate it in fat free italian dressing---cut into strips and grill.Make a real big green salad,and corn on the cob.....Good, and 1 small ear of corn will not be bad on your cousin.Remember this salsa,veggies are free foods for diabetics.The fruit is a plus for your cousin..Have a great Dinner........
