I mean, horseradish sauce blows the top of your mouth off but it is excellent with Sunday lunch and roast beef, just a little dollop on the side. So you put the jar in a fridge but it deteriorates and you end up throwing it away. Is there anyone out there who can eat a jar of horseradish without their mouth dissolving and their tongue burning to a cinder??

Yep! It's called...unsuspecting relatives who don't realise you packed it into their sandwiches and they politely keep eating LOL but it gets rid of the jar hahahahaha

The "eat within a month" thing is only a guideline. My mum keeps things for ages and they never seem to go off. If you look at a jar of jam, that also says eat within a month, but if you keep it in the fridge you will find that it lasts around 7-8 months. Horseradish will do the same. If you want to try to eat it all in a month, do so by all means. I got thru loads when i was pregnant, but then i was craving horse radish sauce on toast!!!! It is possible, if you like it.

Not to mention it could really ruin your bowels! I think you could use it up if you also have it on sandwiches with the leftover beef, or have beef more often than just Sun. lunch. I am American and I think you're probably British, so I don't know whether you take a sandwich to work for lunch (I have lived in England). American horseradish in a jar keeps for quite a while, we have it with roast beef or steak, also with sausages and sometimes with ham.

I am still using a jar that I opened at least 4 months ago, and I have not even kept it in the fridge. I am still alive and kicking, so I would just ignore the 30 day use by instruction.

The more you eat something like that the more resistant your body will become to it's burn. If you eat a some everyday you could probably polish the jar off in a month easily. Try it on bratwurst or polish sausage, it really adds a nice bang to them.

oxygen is the main cause of flavor loss.
keep your horseradish in plastic bags and store. (8-10 months, depending on temperature)
don't let it dry out, and the flavor will remain.
