Baked Cod Portuguese
2 tbspns olive oil
1 onion, peeled and chopped
1 clove garlic, peeled and chopped
1 green pepper, cored and chopped
1 14 oz (400g) can tomatoes - chopped
2 tspns paprika
4 cod steaks or fillets
chopped fresh parsley to garnish
Preheat the oven to Gas Mark 5, 375F or 190C and grease an ovenproof dish.
Fry the onion, garlic and pepper in a pan to soften. Add the tomatoes and paprika and simmer for about 5 minutes until the sauce is thickened. Taste and add salt and pepper if required.
Put your cod in the dish, pour your tomato sauce over and bake in the oven for about 20 minutes until the cod is cooked.

Cod fillets can make a healthy treat when cooked at home. Here, they are marinated Spanish-style in a mixture of lemon juice, garlic and herbs. This dish is simple goes particularly well with a tomato salad, and your red wine.
Spanish Marinated Cod
11/2 - 2lb(700-900g) cod fillet
1 bay leaf
2 tbs virgin olive oil
Juice of 1 lemon
1-2 cloves garlic
2 tsp ground coriander
Salt and freshly ground black pepper
4 lime wedges and fresh parsley sprigs for garnish
To make the marinade, tear the bay leaf into 3 pieces. Place the bay leaf, oil, lemon juice, peeled garlic, coriander and seasoning in a shallow dish and whisk together with a fork
Cut the fish into 4 pieces and immerse, skin sides up, in the marinade. Leave to marinate for at least 11/2 hours, turning and basting two or three times. Preheat the grill. Place the pieces of fish in an ovenproof dish, skin side down, and spoon over the remaining marinade. Cook for 10 minutes under a moderately hot grill, basting occasionally with the marinade, until the fish is golden-brown.
Lift the pieces of fish from the dish and arrange on serving plates. Spoon over the remaining marinade and garnish each piece of fish with a slice of lemon and a sprig of parsley. Serve immediately.

Baked Cod
1/2 cup Parmesan cheese
1/2 cuup crushed Ritz or butter style crackers
4 tbsp butter melted
2-3 tbsp olive oil
2 gloves garlic, minced ( more if you love garlic)
parsley to taste
Salt and pepper to taste
Fresh Lemons
Clean Fish and pat dry
Preheat oven to 350
Sprinkle fish with salt and pepper
Rub fish with olive oil
Toss Parmesan cheese, cracker crumbs, garlic, parsley and butter in a bowl. Sprinkle over the little fishy. Put him in the oven and bake ,until tender and flakes with a fork.
Serves well with pasta, rice, baked potato. Maybe some Sangria and Mexican rice

Cod steaks crumbed
4 thick cod steaks
Flour seasoned with salt & freshly ground pepper
1 egg beaten with 1 tsp olive oil
Fine white breadcrumbs
Oil for frying
Dry cod thoroughly with paper towels. Lightly coat them in flour & then brush with egg & coat in bread crumbs.
Fry the cod in 1/2 cm of hot oil for 2-4mins on each side. Drain on crumpled paper & serve with lemon wedges and fried parsley

My grandma (Italian) cooked cod fish in flour and fried it in a pan. It was very good and is the only fish I like to this day. Bread the cod with the flour, use eggs to help the flour stick.
Flour it up, dip in egg and then flour it again and stick into oil.

You mean recipe? Just type in recipes for cod and your search engine will come up with loads. Personally I like mine battered and fried, or cooked in butter or cheese sauce
