For my last batch, I fried up a pound of hamburger and added a packet of taco powder, like for making normal taco meat. I put the chips in a deep dish pie pan, put the meat over that, topped it with tons of shredded cheddar, manchego, and pepper jack. And topped that with pickled jalapeno slices, black olives, and chopped green onions. Pop that in the broiler for a couple minutes (watch carefully), and it's done when the cheese is melted and barely brown. SO GOOD.
(Oops, there was a can of black beans in there too.)

It took me awhile to get the recipe for "white cheese dip" but, finally I mastered it and it is super easy and VERY good.
2 cans of Mexican creme
16 oz. white American cheese
jalapeno juice (bottle of jalapenos)
open the cans and empty in a medium size bowl (microwave safe) unwrap cheese and put all of it in the bowl. Put in the microwave and heat for about 2 minutes, take it out and stir (using a whisk is better), put it back in until all the cheese has melted. Then season to taste with the jalapeno juice.
Use this as just a dip for chips or pour it on top of tacos or nachos............it is wonderful.
Every time I serve it everyone raves!!!!!!!!
For nachos:
I like to get a taco seasoning packet and fry my chicken or ground beef, then add the seasoning.
Pour the mixture over the nacho chips that have been placed on a baking sheet, heat at 325 degrees for about 10 minutes. Remove to a large platter and then pour some of the cheese mixture on top.......................yummy

People always like this simple recipe:
Get a couple of cans of "Nacho Cheese" campbell soup, some salsa, and a pound of ground beef.
1.Brown the ground beef, drain.
2.Empty both cans of the soup into a pan and heat it up to a simmer. Do not add water.
3.When it is hot, add the pound of ground beef.
4.Next, add salsa to taste. (I think I usually use about 3/4 c, but it just depends how you like it. Just keep adding it until it tastes yummy to you.)
5.Serve with tortilla chips and enjoy!

P.S. Sometimes, if I am feeling fancy, I will lay out the chips on a cookie sheet or two, and pour the cooked cheese mix on top of it. Then I add tomatoes and lettuce, and sometimes onions. I cal this "Cheesy Nacho Goodness." It is always a hit. :)

Easy Nacho Supreme
Serves: 6
Preparation: Preheat oven to 350'F. Spray pizza pan or cookie sheet with nonstick cooking spray.
Clean: Wash hands.
1 package of Tyson Fresh Ground Chicken
1/4 cup chopped onion
2 cloves garlic, minced
1 tablespoon chili powder
1 1/2 teaspoon ground cumin
6 cups (4 oz) tortilla chips
2 1/3 cups (10 oz) chredded Colby-Jack cheese
1/4 cup sliced ripe olives
3 tablespoons diced green chiles
Cook:
In a medium nonstick skillet, combine chicken, onion, garlic, chili powder and cumin.
Cook, stirring frequently over medium-high heat 6 to 8 minutes or until internal juices run clear.
On prepared pan layer half of chips, 1/2 cup cheese and half each of the chicken mixture, olives and green chiles.
Repeat layers
Top with remaining 1 1/2 cups cheese.
Bake at 350'F 15 to 20 minutes or until hot and cheese is completely melted.
Serve: Top with chopped tomato and serve with sour cream, salsa and gucamole, if desired.
Chill: Refrigerate leftovers immediately.

Take a small block of velveeta cheese and microwave it with 1/4 cup of water. Stir every minute until melted. (It won't take very long if you cut the velveeta into chunks first.) When you are ready to serve, pour the hot mixture over the tortilla chips and add sliced jalapeno peppers to top. This is quick and easy. For a change of pace, leave out the water and add 1/2 cup fo salsa to the velveeta and nuke.

Put tortilla chips with Mexican shredded cheeses in the microwave for 1-2 minutes. Take out of microwave and add sour cream, dice tomatoes, shredded lettuce, salsa and black olives.
