Vinegars you can keep in your cupboard, There are 2 types of balsamic vinegar, dark as well as light! Depending on which type of oil you prefer to use, it is also best to keep them on the shelf, but in a cupboard. Refrigeration of oils will not hurt them, but, depending on their type and consistency, the oil will congeal, making it more difficult for regular, immediate use.
One of the most interesting oils for salads is grape seed oil, It is light, will stay fresh on the shelf longer than extra virgin olive oil, and has a slightly fruity taste. You can make your own "vinaigrette" by adding equal parts of grape seed oil and light balsamic vinegar, a large dollop of Dijon mustard paste, and salt to taste, shake in a jar or bottle and voila! Enjoy!

Olive oil- I do not refrigerate. Never have a bottle any longer than a couple of months, but it's always good.
Balsamic Vinegar- I do refrigerate. It's an aged product to begin with, so I don't think there would be any problem storing it from year to year but I don't imagine you'll have it that long either.

No refrigeration needed on oil nor vinegar and the vinegar gets stronger with age.

You don't have to refrigerate either. I use these as well. Frankly, I use them almost daily and have never had to worry about shelf life. I would think 6 months - 1 year tops for both.

Same here - I refrigerate my balsamics and leave the olive oils out. best not to keep them for years and years tho!

I don't refrigerate either of them. That is, until I combine them into dressing, then it goes in the fridge. I figure with the fresh garlic in the dressing, it will easily go bad at room temp.
