Serve the Cornish Game Hens on a bed of herbed couscous, which is available in well stocked grocery stores, near the boxed dinners (like Mac&Cheese and Hamburger Helper) and serve some oven roasted veggies (that you can do at the same time that you do the Hens, so there is another step out of the way....) and the couscous just requires some herbs of your choice and some boiling chicken or veggie stock (broth), pour the couscous into the boiling stock, stir a couple of times, cover and remove from the heat.........it will be ready to fluff with a fork in about 10 minutes........See how easy that was???

A Very Simple Sweet Potato (Or Yam)
1 medium yam or sweet potato
2 teaspoons liquid honey
2 teaspoons butter or margarine
salt & fresh ground pepper
Wash potato thouroughly, cut off any dark marks on the skin and cut about a quarter inch into it completely around it lenghwise.
Microwave for approximately 10 minutes on high or until fork tender.
Remove to a microwaveable dish, slice it in half through the cut made earlier, score the inside meat.
Drizzle the honey over the inside, spread 1 teaspoon on each side and spread 1 teaspoon of butter on each side. Sprinkle with salt and pepper.
Place back in microwave and cook for 30 seconds.
Enjoy.
And green beans almondine or steamed asparagus can't go wrong with either.
Don't forget the salad.

Since the hens are usually served whole, in order to keep from overwhelming the plate, I would go with something small: one small, perfectly roasted tomato or a miniature bell pepper with a rice or goat cheese stuffing. A mix of colorful miniature roasted vegetables would be nice too.

You could try wild rice and then stir fry greenbeans, mushrooms and sliced onions. Just before you serve it squeeze a little bit of lemon juice over it.
