Althought to be fair, you should never eat anything that is able to provide a rational argument as to why it shouldn't be eaten.

Rare or medium rare depending on how the restaurant does it. Someone mentioned parasites - there are none inside the meat, and the idea of cooking it longer to remove them is foolish. Someone else mentioned tartare - I agree, that rocks! And those who have it burnt ('well done' actually still includes some pink - no chef will make a steak completely brown through), why waste money on a steak? Just have a burger or something instead, as you've cooked all the flavour out of it anyway.

Rare preserves the flavor of the beef and keeps it moist. Overcooking steaks is not necessary due to the eating patterns of cows. Chicken and pork must be cooked to 165 degrees becuase of their diet.

It is quite acceptable and usual to eat the meat rare, with the centre fairly red, it's just the thought of it being raw isn't it? I prefer to have mine well done.
