Ingredients:
1 sm Onion; chopped
1 sm Green bell pepper; chopped
1 sm Red bell pepper; chopped
1 Tomato; chopped
1/2 c Fresh lime -=OR=-
1/2 c Fresh lemon;
Pepper to taste
1 tb Fresh basil;
-=OR=-
1 tb Dried leaf basil;
Hot red pepper flakes;
Instructions:
Combine all ingredients in a small bowl. Let stand 20 minutes before serving. Add hot pepper flakes if desired.

Fresh Tomato Salsa Recipe Ingredients
2 large, red ripe tomatoes, peeled and seeded
1 garlic clove peeled
1 Anaheim green chili, seeded and cut into thirds
3 green onions, cleaned and cut into 1 inch pieces
4 oz canned chopped green chilies
1 to 3 whole jalapeños, deveined and seeded (Optional to taste)
1/4 cup fresh Cilantro, chopped
1 teaspoon olive oil
1 Tablespoon lime juice
salt and pepper to taste
¼ cup ice water

This authentic Mexican tomato salsa recipe is very easy to make. It sure is easier and a heck of a lot quicker to reach for a blender, but we love the chunky, rustic texture of salsas made in a molcajete, or traditional Mexican mortar. And spices ground against the rough black basalt give off truly potent aromas - which make our meals all the more flavorful.

Char the tomatoes over a gas grill or under the flame of a hot broiler for a few seconds, turning them until the peel blisters. Slip off the peel, and the flesh will still be firm. Remove the green stem core and cut the tomatoes in half vertically. Use a teaspoon to scoop out the seeds.
In the food processor, turn the motor on chop first and drop in the garlic, cilantro, green onions and jalapeños into the bowl of the food processor to chop for just a few seconds.
Turn off the motor and scrap down the sides of the bowl using a rubber spatula.
Add all the remaining ingredients from the tomato salsa recipe, tomatoes, Anaheim chili, the chopped green chilies, olive oil and lime juice . Process with brief pulses to reach the desired texture, somewhere between a chow-chow relish and a textured puree.
You want to see bits of all the vegetables through out the salsa.
Salt and pepper to taste.
Pour into a serving bowl and allow to season for approximately one hour.
Just before serving mix in the 1/4 cup of ice water to cool the salsa.
Serve with tortilla chips, enhance your favorite chicken recipes, fish, barbecue beef, or with beans wrapped in a tortilla.

Salsa Borracha
INGREDIENTS
4 fresh tomatoes
10 fresh jalapeno peppers, halved lengthwise and seeded
1 (12 fluid ounce) bottle Mexican beer
1/2 cup water, or as needed
1 clove garlic
1 slice onion
salt to taste
DIRECTIONS
Place the tomatoes and jalapenos into a saucepan, and pour the beer over them. Add enough water so that the tomatoes and jalapenos are covered. Simmer over medium heat until soft. Remove from heat, and let cool slightly.
Transfer the tomatoes and jalapenos to a blender, and add the garlic and onion. Pulse until well blended. Add some of the cooking liquid to help with blending if necessary. Taste, and season with salt.

Dice an avocado, a couple of small tomatoes (remove the seeds first) an onion, as much of any hot chili you prefer, add some chopped coriander, salt, pepper & lime juice. Everything should be crisp, fresh & ripe and it will look great!

this is for salsa verde........15 tomatillos, 1 bunch of cilantro, 1 onion, 3 cloves of garlic, 6 jalepeno peppers, salt to taste, lemon juice to taste. boil the tomatillos, peppers,and onion together. the tomatillos are done when the start to crack a little. the peppers are done when they turn olive green in color, and the onion is done when its a little tender. when its all done put it in the blender and add the cilantro to it, and blend it up. then add the remaining ingredients. its soooo good!!!

Roast or grill tomatoes, jalapenos and onions
Dice these all up and mix in bowel with fresh cilantro
And minced garlic, salt and lime juice to taste
Let sit in refrigerator for at least 4 hrs
