I sold my car on ebay. It was SORN declared. I need to tax it for the buyer asap, but i tried it online and if i do it, the tax starts from december. Surely I can tax it now to start from Jan 1st????

You won't be able to tax it from Jan 1st until Jan 2nd. Tax always runs from the current date and is with effect from the first of the current month. At least that's the way it worked when I lived in UK.

Bostonian's right - you can only tax it for the following month if it's currently taxed, and you're tacking the new tax on the end of the existing one.
