I have six leftover filet mignon steaks. Unfortunately they are more medium than rare, so I just can't heat them up. I thought about using them in a crock pot recipe in place of round steak. Will that work out ok? Or do you have another idea? I have to feed my family of 9 tonight with them.

I had this with my leftover filet mignon the other night. I was very tasty if you enjoy pastas without a lot of "sauce".

Boil a pot of pasta in salted water, whatever you like, I used Ziti
Slice the filet into thin strips. Set aside.

Saute garlic in olive oil
Add sliced sundried tomatoes (oil packed work best)
Add the filet.
Saute for just a few seconds to combine. Remove from heat.

Drain pasta and return to the pot then add the saute to the pasta and stir.

Stir in some shredded mozarella cheese and grated parmesan cheese. Add the chopped basil at this point too.

Place in a greased baking dish. Sprinkle with both of the cheeses and bake at 350 for about 20 minutes.

I didn't overdo the cheeses, and all of the ingredients can be adjusted to your taste. I had the fresh herbs on hand from the holidays and it was freshly grated parmesan. The filet was already delicious to begin with and this was quite a tasty dish later in the week.

Well, if it's large enough - a whole tenderloin - just cut in half, and only cook 1/2 off it - you can freeze the other for another time. Otherwise, you could make some beautiful sandwiches with it - sliced thin and piled onto crusty rolls with a little blue cheese dressing and some arugula. Or slice up the leftovers and toss into a stir fry - that's always easy and delicious!

Beef Stroganoff

2 lbs. filet mignon, cut into strips
3 TBSP unsalted butter
3/4 c. finely chopped onion
1 lb. small fresh white mushrooms, caps only, wiped clean and halved
2 1/4 tsp. all-purpose flour
1/3 c. beef stock or broth
1/3 c. heavy or whipping cream
1/2 c. sour cream
2 tsp. dijon mustard
1 1/2 TBSP chopped fresh dill
1 1/2 TBSP chopped fresh parsley
Salt and freshly ground pepper to taste

1. The first step of the recipe is to sear the meat and then set it aside, so you can skip that.

2. Melt the butter in a medium skillet over medium heat. Add the onion and saute until softened, about 5 minutes. Increase the heat to medium-high, then add the mushrooms and saute until they are deeply colored, about 20 minutes.

3. Turn down heat to medium-low. Sprinkle flour in the skillet and cook, stirring constantly, for 1 minute. Stir in the stock, cream, sour cream and mustard. Simmer over low heat until the sauce thickens, about 5 minutes; do not allow to boil.

4. Return the meat to the skillet, stir to coat w/ the sauce, and heat for 1 minute. Stir in the dill, parsley, salt and pepper and serve at once.

Serves 4 to 6, so you may need to adjust the recipe

This is typically served on a bed of rice, pasta or potatoes. Whatever you have handy.

You could make them into a nice stir-fry. Get some veggie's - broccoli, shredded carrots, onions, peapods, celery, mushrooms, green & red peppers, etc... Sautee' the veggies in some olive oil, add some soy sauce or teryaki and then when the veggies are tender but still crisp, add the sliced steak. Mix all together and sautee' for 2-3 minutes until the steak is just warmed through. Serve over rice.

To feed nine I'd say cut the steaks up into pieces, throw them in the crock pot with some cut up veggies (carrots, potatoes, onions, tomatoes, turnips, mushrooms - whatever you like) add some beef stock or bouillon and that should do it - beef stew.
Just serve a salad on the side.

If you didn't have to feed 9 people tonight, I would have told you to slice them thin and eat cold or room temp with some sauted mushrooms and onions topped with bleu cheese.

You could make a huge steak ceasar salad and serve with garlic bread, steak burritos or tacos with beans and rice, stroganoff with egg noodles and asparagus or broccoli, stew with rice or cornbread, chili with rice or cornbread, beef and veggie soup with rice or cornbread, a nice beef, mushroom, onion, and veggie bake.

In the superstore, fruits are usually selected much too soon. Some are rocks, many are bad. Some of the fresh vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
