Try using a thicker conditioner and really getting it into your scalp. Don't rinse completely, either. A lot of itchy scalps are caused by a lack of moisture in the scalp, and using a good conditioner can help alleviate it.

RE:
can someone recommend a shampoo for my itchy scalp that does NOT strip the colour?
for years i used Head and Shoulders with no problems but since I have had to start colouring my hair to cover lots of grey, I find that H&S strips the colour from my hair after only a few weeks, I cannot find another product that deals with my itchy scalp but that leaves the colour in tact....

First of all you need to find out the real reason why you have problems with your scalp. It can be very different causes from bad diet to allergy on some of the ingredients in shampoo or conditioner that you use.
Most of anti-dandruff shampoo content the zink oxide that actually covers your skin with a film and won't let the flakes to fall off. None of them will actually treat the condition.
What color did you dye your hair? If it's red than I should tell you that red pigment is the most difficult to maintain. It dos not stay in your hair and your have to be carefull with a choice of shampoo.
If you will look at the color process under the microscope what happenes is your natural pigment gets removed and the chemical pigment placed in instead. Both of these pigments will have a shape of a sphere. If you color your hair with henna than pigment will be the shape of a star. This is a reason why after natural henna color your can't get rid of gold pigment in your hair. Star stucks really well in hair structure. It doesn't mean that you will have a beautiful golden hair for a long time, it means that if you would like to change a hair color to cold red or any other cold shades that don't have gold as a base it would be very difficulte and gold will pop out in about 6-7 washings anyways.
Do NOT use any clarifying shampoo. It formulated to strip any build up styling products off of your hair so your color will go as well.
You have to look at your diet very carefully. Do you eat enough veggies and fruits? If not it cam be a source of your flaky skin. Get yourself multi-vitamins+minerals. I use Centrum performance. It will boost your immune system and give you microelements that you lack to maintain healthy skin, nails and hair. If after 3-4 months you won't see results go to the healthfood store and get vitamines specificly formulated for hair and nails.
Don't eat any marinated veggies, avoid coffee, strong black tea, go for green and white tea, replace sugar with honey, eat more whole grains. Caffeine stimulate production of oils in your hair follicules and by the end of the day bacterias will multiply and can be a reason for your flaky scalp.
Marinated stuff: white vinegar (acetic acid) is pretty harsh on your liver. Your poor liver uses 36 chemical reactions to diagest acetic acid. If you like to use vinegar for cooking go for cider vinegar the only one that good for you.
Drink a lot of water.
Try Fructis anti dandruff shampoo + conditioner for colored hair. I worked with this product for the past 8 years. Great results. Redken is not that popular in Europe, but when I moved to US I used it in my hairsalon for couple of years. Try Color Extend Shampoo + Color Extend Conditioner. It might illiminate a problem with flaking if you change your diet and start to use good quality hair products.
Another reason why you might have a flaky scalp can be a medical condition. Bacterias that live on your scalp. If your flaking will get too bad go to dermatologist for check up.
Good luck. Any questions just ask anyuta_m@yahoo.com

Shampoo in the market is somewhat same. I can give you a herbal solution. Take hibiscus leaves and crush it and rub it in a stone with a bit water till it becomes slimy and soapish. Apply in your scalp and leave it for half an hour and see the difference.

When I went red (which, by the way, is hard to maintain), Selsun Blue Moisturizing formula did the trick.

You should try neutrogena shampoo. It doesn't have the best smell but it really helps.
