Chocolate cake
When we hear the word cake, the first cake that comes to ones mind (at least my mind!) is chocolate cake. A moist chocolate cake is sure to satisfy any cake lover:
Ingredients:
For the cake frosting:
2/3 cup heavy cream or whipping cream
chopped semisweet chocolate (around 260 grams)
For the cake itself:
1+1/4 cup flour
2 eggs
1/2 cup milk or water
1 cup sugar
1/2 cup oil
1 tablespoon vanilla essence
2 tablespoons cocoa powder (unsweetened)
2 teaspoons baking powder
Preparation method:
First of all, preheat the oven to 350 degree Fahrenheit.
Then grease a baking cake pan (which should be around 9 inches).
Mix the flour, cocoa powder, baking powder, sugar and
vanilla essence into a bowl. Then add the milk (or water, whatever you choose), oil and eggs. You can mix everything together by either an electric mixer or simply by hand. Continue stirring it until its smooth.
Transfer the mixture onto the greased cake pan and bake at 350 degrees Fahrenheit. It should take approximately 35 to 45 minutes (a great way to check is to insert a toothpick in the center and if its done the toothpick will come out clean).
When the cake is done, gently remove it from the pan (simply invert onto a plate) and let it cool for a while. After the cakes done cooling, slice it through the middle to make it into two layers.
Now for the frosting, first of all heat the heavy cream (or whipping cream, whatever you choose to use) in a pan.
After your done heating the cream, add the chopped semisweet chocolate to it. Stir it until its smooth and let it cool until in thickens.
Then apply little bit of the frosting (around 1/3) between the two cake layers, some on the top (again, around 1/3), and the rest around the cake.
Finally, put the cake into the fridge for an hour or more so that the frosting hardens. Serve it at room temperature.

*chocolate marshmallow cake*
6 ounces butter (3/4 cup, 1 1/2 sticks)
1 1/2 cups sugar
3 tablespoons unsweetened cocoa
3 eggs
1 1/2 cups self-rising flour
1 1/2 cups chopped pecans
1 teaspoon vanilla extract
6 ounces miniature marshmallows, about 3 cups
Icing, below
PREPARATION:
Cream butter and sugar until light and fluffy; beat in cocoa. Add eggs, one at a time, beating well after each addition. Add flour, nuts and vanilla; mix well. Pour batter into greased and floured 9x13x2-inch baking pan.
Bake chocolate marshmallow cake at 325° for 40 minutes. Remove from oven and place miniature marshmallows on top of hot cake. Let marshmallows melt then frost with icing (below) while still warm

BUTTER HALF CAKE
-1/4 cup butter, softened
-1/4 cup butter flavored Crisco
-2 eggs
-1 cup sugar
-1 1/2 cups sifted cake flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1/2 cup buttermilk, yogurt, or sour cream
-1/2 teaspoon vanilla extract
-1/4 teaspoon almond extract
-1/8 teaspoon mace (optional)
Method:-
1) Preheat oven to 350 F degrees. Butter and flour one half-size bundt cake pan or one bread loaf or large brownie pan.
Cream butter, Crisco, and gradually add the sugar, creaming until light and fluffy. Add eggs one at a time, beating well after each addition.
2) In a separate bowl, sift together the flour, baking powder, soda, and salt. Add flour mixture alternately with milk and flavorings to creamed mixture, beating after each addition until smooth and light. Pour batter into cake pan. Bake for 20-25 minutes or until a toothpick inserted in center comes out clean.
3) Cool in pan 10 minutes, remove and finish cooling on rack.
4) Frost when cool with your favorite frosting or drizzle with confectioner's icing and sprinkle with cinnamon sugar.

2 (8 ounce) packages cream cheese, softened
1/2 cup butter
3/4 cup confectioners' sugar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch pan. Sprinkle walnuts and coconut evenly over bottom of pan.
In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in water, oil, and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan. Set aside.
In a saucepan, combine cream cheese and butter. Cook over medium heat, stirring occasionally, until melted and smooth. Stir in confectioners' sugar. Pour cream cheese mixture in rows (lengthwise) over the top of cake mix. Using the tip of a knife, swirl the batter to create a marbled effect.

EASY BLACK FOREST CAKE
INGREDIENTS:
1 chocolate cake mix, 2-layer size
2 cups whipping cream or heavy cream
2 tablespoons confectioners' sugar
2 teaspoons vanilla extract
2 tablespoons Kirsch
1 can (21 ounces) cherry pie filling
1 ounce shaved semisweet chocolate
PREPARATION:
Prepare chocolate cake following directions on package, making 2 round 9-inch layers.
Cool cake thoroughly.
In a small bowl, beat the cream with the confectioners' sugar and vanilla until stiff peaks form.
Brush tops of the cakes with the Kirsch.
Place one cake layer on a cake plate and spread with about 3/4 cup of the whipped cream.
Top with half of the cherry pie filling, then top that with the second chocolate cake layer. Spread the side of the cake with half of the remaining whipped cream. Spoon remaining pie filling on top of cake, keeping it in the center. Spoon or pipe remaining cream around the cherries. Sprinkle the whipped cream around edge with shaved semisweet chocolate.
Serves 12.
BASIC VANILLA CAKE
1/2 c. butter
1 c. sugar
1 tsp. vanilla
2 eggs
1 1/4 c. flour
1 tsp. baking powder
Mix butter and sugar. Add vanilla and eggs; mix well. Add flour and baking powder; mix well. Bake in 350 degree oven approximately 25 minutes (8x8 pan).
To change flavor of basic cake:
Add:
3 tablespoons cocoa or
1 teaspoons cinnamon and 2 cups apples, chopped or
1/2 cup black walnuts or
1/4 cup butter, 1/2 cup brown sugar and 1 cup crushed pineapple mixed together in bottom of pan.
CASHEW NUT CAKE
Ingredients:
Cake:
½ cup margarine
1 cup sugar
3 egg whites
1½ cups flour
¼ teaspoon salt
1½ teaspoons baking powder
1 cup milk
½ teaspoon almond extract
2 cups ground cashews
Frosting:
2 egg whites
1 cup confectionary sugar
1/3 cup margarine
1 teaspoon almond extract
1 teaspoon salt
1 cup ground cashews
Method:
Cake:
Cream margarine and sugar until smooth. Add egg whites and mix well. Add the rest of the cake ingredients and mix well.
Grease a 9" round cake pan and bake at 350ºF for 25 minutes. Let cool.
Frosting:
Beat egg whites with sugar until stiff. Add margarine, salt, almond extract and beat well. Spread on top and sides of cake.
Traditional decorations are maraschino cherries and lime confetti, small pieces of shredded lime peel
