I have repeatedly tried to cook a sweet potato in the microwave and it always comes out dry and mealy. I've tried adding water and steaming it too. Is it possible to cook one in the microwave? I really have my doubts about it. Thanks.

Wash it well, then place the potato on a paper plate and pierce the skin with a fork a few times. Depending on the size of the potato I cook mine on high for five minutes then check it and cook it for a couple of minutes more.
Something else that is good is to take a tablespoon of butter and mix it with a couple of dashes of cinnamon and a pinch of nutmeg. When the potato is done to your likeing cut it open and place the butter mixture inside the potato. Yummy!
Also do not peel the potato as it will come out very dry.

Mealy sounds overdone. Make sure the potatoes are good to begin with. Are you cooking them with the skin on? Try peeling it, cutting it into a medium sized dice and cooking it for half the time you are using for a whole one. It needs to be put in very little water and covered. You should totally be able to nuke it, I did it for baby food all the time. If you have a newer microwave, it may have a setting for vegetables to help you gauge the cooking time.

I cook mine in the microwave. I wash and wrap in a paper towel. (I do not peel) I cook for two minutes--turn--cook for one minute--turn--cook for one minute. Depending on the size of the potato-- I feel and if it feels soft, I take out--cut lengthwise and put butter or margarine on and eat. Very good. It could be the type of sweet potato you buy also. If you cook the same type of potato any other way, is it also mealy? Just a thought.

First - pierce it in several places with a knife or a fork.

Then, about 5 minutes on high, flip it around and another 3 minutes or so. Then cover with a bowl for 5 minutes. Doesn't need water.

Some people like their sweet potato dry.

you need to keep it covered when you microwave.

They both taste the best when you cook them on the grill. when grilled you taste the reason it is called a sweet potatoe, it tastes as though you put honey on it when you grilled

Are they fresh sweet potatoes...try poking them with a fork, smear butter or what ever you use wrap loosely in wax paper.
