There is no way to do this. You will have to copy them to 2 or more folder as many times.

First save a File as .doc or .xls. Say :
greetings_01.doc in C;\greetings .
Then use Save as option to specify a new Folder : say
c:\Docs\ and then give the name for File .
Or use Copy , Paste and Rename the File (s)

Use SAVE AS command instead of SAVE command.
SAVE AS COMMAND- Save the file in the location of yoUr choice with the name as u wish. U can save the same named file at different locations.But, Cannot open the two at the same time.
Again use the SAVE AS command- and save the file in the other location of ur choice.
Repeat the process for the no. of times u want to save the copy of the file.

I don't think there are any options in the MS office apps to do this automatically.
You could write a macro to do it.
However you could also use something like FolderShare to replicate the contents of one folder to somewhere else (like another computer) whenever the contents of the folder get's updated. I use this to synch stuff between work and home. Foldershare.com was recently bought by Microsoft, but still free.
