Hmm... Depending on the nature of your project. Search Japanese sites, then Scandinavians as these are predominant seafood countries. To me, it's simple.
Salt water fish - oily ( e.g. Sturgeon, Salmon, Cod, Tuna )
Salt water fish - lean ( e.g. Sole, Halibut, Snapper )
Fresh Water Fish - oily ( e.g. Eel, Steelhead )
Fresh Water Fish - lean ( e.g. Bass, Catfish )
Crustacean - ( e.g. Shrimp, Crab, Lobster )
Bi-Valves - ( e.g. Oyster, Clam, Mussel, Scallop )
