Cooking Techniques For The Perfect Steaks:



Using dry heat is the best way to cook steaks and other tender cuts of meat. Dry heat cooking causes the exterior of the meat to brown and caramelize which gives the steaks a richly browned complex flavor. This is partly a result of the sugars inherent in the meat going through a series of complex reactions called the "Maillard reaction." The moisture on the surface of the meat also evaporates and the juices becomes concentrated, forming the appealing brown crust.


Use a Meat Thermometer:

For best grilling results, cook steaks according to a Cooking or Meat Thermometer rather than a timetable. Remove steaks from the grill 5 degrees before your steak reaches the desired doneness. Let steaks rest 5-10 minutes before serving. During this time the meat continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the oven) and the juices redistribute (add juices that accumulate from resting steaks to wine sauce).

Rare - 120°F
Medium Rare - 125°F
Medium - 130°F

Try soaking the meat in vinegar with seasoning, little vinegar is very important, too much will ruin the meat. Smoking also will work wonders! A couple chunks of apple wood with a drip pan full of water/fruit juice(half and half) makes amazing pork and beef. No matter if you're roasting, smoking or grilling bath the meat in juices, marinade anything acidic. The absolute best marinade for beef is Worcestershire. I use Hienz brand but they all are basically the same. Overnight soak you'll have meat so tender and juicy, you won't even have to chew. However, if that still isn't enough, there is hammers to pound tender or work the meat through your hands to break up the fibers. Good luck!

Granny's Steak and Gravy


3 pounds thick sirloin or round steak
Salt
Cayenne pepper
Black pepper
3 tablespoons vegetable oil
2 medium onions, chopped
1 bell pepper, chopped
1/2 cup water, divided
2 tablespoons cornstarch

Serving suggestion: steamed rice


Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

First you need to give it a good bash to tenderise it, then leave the meat to rest for 1 hour, if you fry it you need the pan to be hot and if you want it tender cook it for no more than 7 mins both sides if you grill it cook for approx 10 mins. never overcook rump as it will be as tough as an old boot (less cooking is better) and as long as its fresh you can have it as rare as you want...(I like mine with pepper sauce..yum)

Grease a frying pan with oil, then heast pan until really hot. Throw the steak in and turn straight away! Then let fry for a couple of seconds before turning again. Once the outside looks nice and brown .. its ready!! I wouldn't cook it for longer than a couple of minutes!! I use a chilli oil to grease pan with!! A nice pepper sauce mmmm... enjoy!!

I always cook it wrapped in tinfoil and cooked in the oven. Place it on a baking tray or in a oven dish, and cook on a gas mark 5 for as long as you personally want it cooked. I leave it for about one and half hours it melts in your moutth
