How soon can you ask someone that you are dating if they are only interested in a casual relationship or if they are looking for something more committed? And if you are older (late 30s) is it more acceptable to ask earlier in the relationship?

The sooner you get it all out in the open the better. Otherwise you might create false hope.

Don't you think that time is the only answer here. How do you know if the feelings are going to be casual or deeper unless you pay attention. Things generally get along as time goes on---why ask???Why risk making a person uncomfortable---just let nature take its course. If it isn't happening, then you got your answer---move on

That would depend on how frequently you were seeing them and on what level (i.e one a month, drink, meal and bed or.... something with a bit more meaning) Do they discuss their family, do you discuss yours, have they just come from a disastrous divorce?... there are so many possibles, but yes, it is not unreasonable to want to know where you stand fairly early on, but you may be shooting yourself in the foot.
My best advice is relax, enjoy it for as long as it is good for you and be prepared to walk away with fond memories... that way it can only get even better.

Age doesn't matter when it comes to a relationship. But I think you should get to knw the person first b4 askin them anythin... If you think that the person is good enough for you, then take the bigger step...ask them to go serious!! :)
