Chewy Chocolate Cookies
1¼ cups butter or oleo, softened
2 cups sugar
2 eggs
2 t vanilla
2 cups all purpose flour
¾ cup cocoa
1 t baking soda
½ t salt
2 cups peanut butter chips or 2 cups semi-sweet chocolate chips
Cream butter and sugar until light. Add eggs and vanilla, beat well. Combine flour, cocoa, soda and salt, gradually blend into creamed mixture. Stir in peanut butter or chocolate chips. Drop by teaspoons on very lightly greased cookie sheet. Bake in 350° oven for 8 – 9 minutes. Do not overbake. Cool slightly and remove from cookie sheet. Makes about 4½ dozen cookies.

Prize Double-Chocolate Chip Cookies
1¾ cups all purpose flour
¼ t baking soda
2 stks unsalted butter
1 cup granulated sugar
1 t vanilla
1 large egg
⅓ cup cocoa
2 T milk
1 cup chopped walnuts or pecans (optional)
1 cup semi-sweet chocolate chips
Combine flour and soda. In a large bowl cream together butter, sugar and vanilla until fluffy. Beat in egg. Stir in cocoa and milk. Fold in flour mixture, walnuts (if using) and chocolate chips. Drop batter by teaspoon onto lightly greased baking pan. Bake at 350° for approximately 12 minutes. Cool about 5 minutes before removing cookie from pan.

.Peanut Butter Cookies
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
.1. Cream the butter for 2 minutes. Add the sugars, cream for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir into the sugar butter mixture.
2 Wrap dough in plastic and refrigerate at least 3 hours.
3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
Makes about 2 dozen cookies.
For chewier cookies, bake at 300°F for 15 minutes.

Check out Cook's Illustrated/America's Test Kitchen, they're like an university of "pro"fessors/scientists/cooks. They test and retest every possible technique, ingredients, and give you the results, good and bad. I own CIA school book, Thomas Keller The French Laundry, Le Cordon Bleu, I have over 30 cookbooks, but I mostly turn to them for advice.
If you're making chocolate chip cookies, use Guittard chocolate chips, it has a higher fat content. Or any other chip that has higher fat than regular Nestle or Hersheys. And only use THE best ingredients(everything counts) butter,sugar,flour, etc. Just check Cook's Illustrated out, thats where I got my info from. HAVE FUN!ENJOY!

buy nestle choco chips, follow directions on back. Then the most important step: refrigerate the dough before baking. This will result in a chewy, execellent cookie. Everybody loves mine!!
**also instead of mixing white and brown sugars, use all the sugar amount as brown sugar. don't overcook.
