Coconut milk/cream Coconut Coconut milk is not the juice found inside a coconut, but the diluted cream pressed out from the thick, white flesh of a well-matured coconut.
To make coconut milk, finely grated coconut meat is steeped in hot water until it is cool enough to handle. It is then squeezed until dry; the white fluid is strained to remove all the pulp. When allowed to sit for a while, the coconut cream (hua gkati) rises to the top. Commercially, coconut cream is obtained by pressing grated coconut flesh by itself without water, using a specialized, heavy piece of machinery.
More hot water is added to the pulp and the process is repeated to yield a lighter fluid, or coconut milk (nahm gkati). Frequently, a third pressing is done to obtain a light coconut milk (hahng gkati), which is used for stewing meats or for thinning coconut milk to make a coconut soup or a light curry. An average mature coconut yields about one cup of coconut cream and one to two cups of coconut milk depending on how light a milk is desired.
For milk cream. Full cream milk has to be boiled and cooled and the layer which forms on top is the cream.

As the first answer said, that cream is really just the fat that floats on the top of the milk. So theoretically, if you buy full milk (with something like 6.0 fat) and you boil it, you get the skin on the top of it. That's the material they make cream of.
You can try "faking" the cream, but it'll never taste that good: use a little bit of milk (several spoons) and add a teaspoon of butter. Heat and stir. when it melts, heat NEARLY to the boiling point, but not quite. It mustn't boil. Meanwhile, mix a spoon of flour with a spoon or two of milk until you get a perfectly smooth mixture. Now SLOWLY add that mixture to the hot milk and butter and stir constantly, until the consistency is nice and creamy.
As I said, this is a fake one and doesn't taste quite as good.

If you are referring to heavy cream, you can make it at home IF you own your own DAIRY COW, know how to milk her & know how to separate the cream from the milk. Just go to the dairy case & get some!!!
It is also called heavy whipping cream in the stores.....
